It was, yes, get this, actually cool today. It felt very Septemberish and my tastebuds started chanting, “meatloaf, meatloaf.”
Well, give the little munchers what they want right?
I had two pounds of frozen ground beef that I inherited from my co-worker, a bunch of veggies, a hint of time and a mother with a ridiculously scrumptious recipe. Meat loaf here I come.
Mamma J’s Meatloaf (aka Hutchinson’s best kept secret)
2lb ground beef
1 of each finely chopped: onion, carrot, fennel, garlic
a few sprigs of basil and parsley
1 tbsp stone ground mustard
zest of 1/2 a lemon
1/2 tsp dried oregano
1 tsp smoked paprika
1 tsp crunchy flaked sea salt
freshly ground pepper
1/4 cup ketchup
2 tbsp brown sugar
1 tbsp dijon mustard
1 tsp balsamic vinegar
pinch of nutmeg
Preheat oven to 350F. Combine all the meatloaf ingredients except for the beef in a large bowl. Mix thoroughly and then add the beef and mix lightly till just incorporated. When mixed, take a cast iron skillet and mold the meat onto the skillet into a loaf.
Next mix all the ingredients for the piquant sauce in a small bowl and then smother the sauce over the top of the loaf.
Put in the oven and cook for approximately 1 hour 15 minutes.
Take out and feel the essence of fall!
