The finished product turned out lovely.  A golden bronzed piece of juiciness.  A side salad of napa cabbage, carrots, scallions with a balsamic, honey-mustard dressing all over rice really fit the bill for a rainy winter night.  Yes, I did say rainy.  Sorry no pictures.  I was not at my house when the beast was roasted for 3 hours!
